- Heat oil in a kadai over medium flame. Reduce the heat and add mustard seeds. Let them splutter.
- Add urad dal, chana dal, dried red chilli, peanuts and cashews. Cook until the nuts are golden and crunchy.
- Add curry leaves, green chilli, hing, and turmeric. Cook for a minute.
- Turn the flame off. Add salt, lemon juice and rice.
- Gently toss everything together to combine.
- Transfer to a plate. Garnish with a slice of lemon and some crispy curry leaves.
- Your flavourful lemon rice is now ready to serve!
