A quick and easy microwave mug cake which is filled with mango jam. This mug cake is made without egg or butter and can be baked in less than 2 minutes. So if you are craving something sweet then do give this recipe a try.
Prep Time 3 minutes
Bake Time 2 minutes
Total Time 5 minutes
Servings: 1 mug cake
Course: Dessert

Ingredients

  • 8 tbsp all-purpose flour
  • ¼ +⅛ tsp baking powder
  • 3 tbsp castor sugar
  • 6 tbsp milk at room temperature
  • 3 tbsp oil
  • 2 tbsp chopped cashews
  • ½ tsp mango essence
  • 2 tbsp mango jam

Method

  1. In a 300ml microwave-safe mug, add all-purpose flour, baking powder and castor sugar. Using a fork, combine everything together.
  2. Then pour milk and oil into the mug. And give it a good mix. Make sure there are no lumps.
  3. Add mango essence and chopped cashews. Mix again.
  4. Once the cake batter is mixed, pour mango jam at the centre. Using a fork, bring the batter from the sides to the top of the jam. Cover it properly.
  5. Microwave it for 1 minute. Then check if it is fully baked. The cake should feel fluffy and springy to the touch.
  6. If the cake hasn’t set then microwave it in 10-second intervals until cooked through. But don’t overdo it. As it might become too dry or burn.
  7. Every microwave is different. So I will suggest you start with 1 minute and then continue microwaving it in 10-second intervals. My microwave is 900W and it took 1 minute and 40 seconds to bake this mug cake.
  8. Then take it out of the microwave and let it cool down for a couple of minutes. Then it is ready to be devoured!
