Boil water in a pot with some salt. Then add the washed rice. Cook until done. It can take around 10-15 minutes. After that drain the rice with the help of a colander.
In a wok, heat oil on medium heat. Add the mustard seeds.
Once the seeds crackle, add dried red chillies. Fry for a few seconds.
Add turmeric powder and cook for a minute or until its raw smell goes away.
Then add the chopped curry leaves, cook for another minute.
Add the rice and give it a nice mix. But be gentle as the rice can break.
Lower the heat, add salt, lemon juice and lemon zest. Mix again. Remove from heat.
Garnish the rice with fresh coriander leaves and lemon slices.
