Egg Salad Sandwich

Rich and creamy egg salad sandwich is perfect for your Sunday breakfast!

Ingredients
  

  • 2 eggs hard-boiled
  • 4 bread slices
  • 1 cup ricotta cheese
  • 1 tbsp milk
  • 1 tsp dried parsley
  • 1 tsp black pepper powder
  • ½ tsp salt

Method
 

  1. Trim the edges off the bread slices. Cut the eggs in half and remove the yolks. Coarsely chop the egg whites.
  2. In a blender, add ricotta cheese, milk, egg yolks, parsley, black pepper and salt. Process until smooth and creamy.
  3. Pour this mixture into a bowl and add the chopped egg whites. Give it a quick mix.
  4. Spread egg salad filling evenly on two slices of bread and place remaining slices over the filling. Cut each egg salad sandwich in half and serve them with a glass of milk.
