In a grinder, combine coriander leaves, mint, sattu, cumin powder, black salt, hing, black pepper, green chilli, ginger and dahi. Grind until smooth.
Transfer the mixture to a jug.
Add chilled water to the grinder and give it a good shake to extract every last bit of the mixture.
Pour this into the jug and mix well.
Fill glasses with ice cubes and pour the sattu chaas over them.
Garnish with fresh mint leaves and serve chilled.
