Desi Bun Omelette Recipe With Masala Burger Sauce

Ingredients:
For the masala burger sauce:
4 tbsp mayonnaise
2 tbsp pav bhaji masala powder
1 tsp tomato ketchup
For the street-style bun omelette:
1 burger bun, sliced horizontally
1 tsp ghee or clarified butter, to toast/fry the bun
4 eggs
Salt to taste
2 tbsp ghee or clarified butter
2 tbsp chopped onion
2 tbsp chopped coriander leaves
1 tsp chopped green chilli
1 tsp pav bhaji masala powder
Method:
To make the easy masala burger sauce:
In a small bowl, add mayonnaise, pav bhaji masala and ketchup.
Mix well and keep it aside.
To make the bun omelette:
In a large bowl, add eggs and salt.
Beat it with a fork until frothy.
Heat a pan over medium flame. Add ghee and allow it to melt.
Once the ghee melts completely, place the sliced bun in the pan (cut side facing down) and cook until it becomes golden.
Then flip and cook the other sides as well. Take it out and keep it aside.
After that add more ghee to the same pan. Allow it to melt.
Pour the beaten eggs into the pan.
Sprinkle chopped onion, coriander leaves, green chilli and pav bhaji masala powder.
Cook for a few seconds and then fold it in half.
Cook for a few more seconds then cut it in half.
Flip each piece and cook until the omelette is fully done.
To assemble the bun omelette/burger:
Place the toasted bun on a plate, and spread about 1-2 tbsp of the masala burger sauce over both sides of the bun.
Place the base half of the bun on the serving plate.
Add the omelette pieces and top them with the other half of the bun.
Serve hot!
