Soru Chakli Recipe | Indian Crepe | Bengali Pithe
Soru chakli is a traditional Bengali dish. It is prepared during the Makar Sankranti festival. Also known as “poush parbon”. This festival is celebrated in the month of January. During which all the Bengali families prepare different “pithe” at their home. Soru chakli is also a type of pithe.
In our family during the three days of “poush parbon”, three varieties of “poli” are prepared. They are doodh poli, rosh poli and bhaja poli. We normally have the soru chakli with doodh poli. But it can also be had with rosh poli, nolen gur, dum aloo etc. We also like to add coriander leaves and green chillies to the soru chakli batter, just to add some extra flavours to the dish.
Soru chakli is quite similar to a crepe. It is a thin pancake which is made with rice and urad dal (black gram). So to make it you have to soak the rice and urad dal overnight. Then grind both to make a smooth batter. The batter should be on the thinner side. Each of these pancakes is cooked on mild heat so that it does not become crisp. It should be soft and thin.
It is an easy recipe and takes very less time to cook. So you can make it without any hassle and enjoy with your family.

Serve: 4 people
Ingredients:
- 1/2 cup rice
- 1/2 cup urad dal or black gram
- 1 tsp ginger
- 1/2 tsp sauf or fennel seeds
- Salt to taste
- 1 tbsp oil
- 2 tbsp chopped coriander leaves (optional)
- 1 tbsp chopped green chilli (optional)
Cooking Directions:
Wash the rice and urad dal nicely, then soak them separately overnight.
Grind both separately and make a smooth paste. Then mix them.
Then grind sauf(fennel seeds) and ginger and make a smooth paste.
Add the paste to the batter, then add salt and water. The batter should be on the thinner side. But not too runny. Mix thoroughly.
Heat a heavy cast iron tawa or non-stick tawa on medium heat.
Now cut the stem of eggplant and dip it into oil, then apply it evenly on the tawa. The eggplant stem helps to equally distribute the oil and makes sure that there is no excess oil.
Once the tawa is hot, pour a ladle full of batter. Spread it evenly into a round shape. The pancake should be thin, just like dosa. But not crisp, it should remain soft. Cook for a few minutes.
Once it firms up a little, start loosening the sides and then flip it. Cook the other side too. Then remove it from the tawa and keep it on a plate to cool down. Then you can fold it. Clean the tawa and repeat the process.
For coriander soru chakli:
To give this recipe a slight twist, I have added chopped green chillies and coriander leaves into the batter.
Mix it and repeat the same process to make the pancakes. Serve them with rosh poli, nolen gur, dum aloo. Here I have served it with dum aloo.
