How to Make Yogurt or Curd At Home

Yogurt, also known as curd or dahi, is a dairy product that is made by bacterial fermentation of milk. To make yogurt or dahi, yogurt culture or started is mixed into lukewarm milk. Then this is kept undisturbed in a warm place for four to five hours or until it sets completely.

So, you can see it is a really simple process. You won’t be needing any fancy equipment for this recipe. You just need a pot to heat the milk over the stovetop and a bowl to set the yogurt. Though you can also set the yogurt in the same pot in which you boiled the milk.

Tips to make yogurt or curd at home:

  1. Always use a good quality whole or full-fat milk. It will yield a rich, creamy and thick yogurt. If the quality of the milk is not good then the yogurt may become watery or may not set.
  2. You can use any kind of unflavoured curd culture or starter.
  3. Always add the curd culture to lukewarm milk. It should neither be hot nor cold. Otherwise, the yogurt won’t set.
  4. During summers the curd will set within 4-5 hours. And you will require 2 tsp yogurt culture for 4 cups of milk.
  5. During winters you will require 4 tsp yogurt culture for 4 cups of milk and it may take 8-12 hours to set. To speed up the process you can wrap a towel or warm cloth around the bowl.

Pour curd in a small bowl and give it a good whisk. Make sure that it is smooth then keep it aside. By doing this we are making sure the curd culture dissolves into the milk uniformly.

Heat milk over a medium-low flame. Bring it to a boil while stirring frequently.

Then turn the flame off and allow it to cool down until it is just warm (lukewarm) to the touch. You can check it by touching the sides of the pot or dipping your clean finger into the milk.

Once it cools down, pour the curd into the milk and stir well.
