One-pot coconut curry noodles, a simple yet comforting noodle bowl recipe that you can serve for both lunch and dinner. This flavourful dish comes together in 25 minutes with just a handful of pantry staples.

One-Pot Coconut Curry Noodles

This rich and creamy coconut curry noodles recipe is inspired by a Thai noodle curry dish called Khao Soi. It is a coconut milk-based curry which can be both vegetarian and non-vegetarian. Here I have shared a vegetarian noodle bowl recipe. A super simple and quick one-pot meal, making it easy to whip up for your entire family.

Cooking Suggestions:

  • Vegetables – So here I have used carrots and french beans. But you can add whatever vegetable you have in your refrigerator. Like for example, you can use bell peppers, cabbage, zucchini, mushrooms, green peas etc.
  • Protein – If you wish to increase the protein content of this dish, then all the vegetarians can add pan-fried paneer or tofu. And the non-vegetarians can add shrimp, chicken or any other meat of your choice. Just make sure you add it towards the end, that is, after adding the noodles into the curry. Adjust the cooking time according to the additional ingredient you are using. As shrimp will cook much faster than chicken. So just be careful, you don’t want to overcook anything.
  • Big Pot – To make this one-pot curry always use a big pot which can easily cook the curry along with the noodles. If you don’t have a large pot, then use two medium pots/pans. Cook the coconut curry in one and the noodles in another.
  • Noodles – For this recipe, you can use any noodles of your choice. Like wheat noodles, rice noodles, egg noodles or even spaghetti. They all will work just fine.
  • Serve Hot – Garnish it with green chillies and always serve hot.

Ingredients:

  • 400 gm noodles
  • 7 tbsp coconut milk powder, or 1 cup coconut milk
  • 2 bay leaves
  • 1-inch cinnamon stick
  • 2 green cardamoms
  • 2 medium-sized onions, chopped
  • 3 green chillies, deseeded and finely chopped
  • 1 tbsp garlic, chopped
  • 1 tbsp ginger, chopped
  • ⅓ cup french beans, chopped
  • 1 cup carrot, chopped
  • 2 tbsp lemon juice
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 3 tsp sugar
  • 1 tsp black pepper powder
  • Salt to taste
  • 9 cups water
  • 2 tbsp oil
  • Green chillies, for garnishing

Cooking Directions:

Add coconut milk powder in a bowl.

Pour 1 cup warm water and whisk until well combined. Make sure there are no lumps in the mixture. You can also substitute it with 1 cup of fresh coconut milk. I just used whatever I had in my pantry.

Heat a pot over medium flame. Pour oil and allow it to heat up. Then add bay leaves, cinnamon stick and green cardamoms. Cook until they become fragrant. It may take approximately 1-2 minutes.

Add the chopped onions. Cook them until they become soft and slightly translucent.

Add the chopped green chillies, garlic and ginger. Saute until the raw smell disappears.

After that pour the chopped carrots and french beans. Cook for a minute or two.

Pour coriander powder, turmeric powder, black pepper powder, sugar and salt. Give everything a good mix. Cook for 2-3 minutes.

Then pour 8 cups of water into the pot, increase the flame to high and bring it to a boil. Once it comes to a boil, add the noodles.

Reduce the flame to low and cover it with a lid. Cook for 5-7 minutes or until the noodles are fully cooked.

Uncover the pot and pour coconut milk into the curry. Give it a stir and bring it to a boil.

Turn the flame off and pour lemon juice. Mix it well. Serve one-pot coconut curry noodles in a bowl and garnish with thinly sliced green chillies.
