Prep Time: 5 min | Cook Time: 25 min | Total Time: 30 min
Serves: 2 people
Ingredients:
1 large potato, thinly sliced/julienne
1 medium onion, thinly sliced
1-2 green chillies, chopped
15-20 spinach leaves, chopped
Handful of coriander leaves, chopped
½ tsp nigella seeds/kalonji
1 tsp cumin/jeera
½ tsp coriander seeds/sabut dhaniya, roughly crushed
1 tbsp fenugreek leaves/kasuri methi
½ tsp red chilli flakes
½ tsp red chilli powder
½ tsp chaat masala powder
A pinch of turmeric powder
Salt, to taste
1.5 cups gram flour/besan
2-3 tbsp water
A pinch of baking soda
Oil, for frying
Instructions:
In a bowl, combine chopped potato, onion, green chilli, spinach, coriander leaves, nigella seeds, cumin, coriander seeds, fenugreek leaves, red chilli flakes, red chilli powder, chaat masala, turmeric, and salt. Mix well.
Add gram flour and mix until combined.
Gradually add water and mix until a thick batter forms.
Heat oil in a wok over medium-high heat. Add baking soda and mix well.
Using a spoon, carefully drop small portions of the batter into the hot oil.
Fry the pakoras until golden brown, turning occasionally.
Remove the pakoras from the oil and drain on paper towels.
Serve it hot with green chutney and enjoy!
Tips:
- Adjust the number of chillies according to your desired level of spiciness.
- Don’t overcrowd the wok while frying the pakoras.
