Serves: 4 people
Ingredients:
For the filling:
2 large-sized boiled potatoes
½ cup cooked white peas/matar
1 medium-sized onion, chopped
2 green chillies, chopped
½ tsp chaat masala powder
Black salt, to taste
Salt, to taste
1 tsp roasted cumin powder
½ tsp red chilli powder
½ cup chopped coriander leaves
For khooni pani puri pani:
1 large beetroot, chopped
1-inch ginger
4 green chillies
50g coriander leaves
2-3 tbsp lemon juice
½ cup tamarind pulp
2-3 tbsp sugar
½ tbsp black salt
1 tsp chaat masala powder
2-3 tbsp pani puri masala
1 tbsp red chilli powder
1 Litre water, chilled
Other ingredients:
10-20 atta Pani puri/golgappe/batashe
Instructions:
In a bowl, add boiled potatoes, white peas/matar, onion, green chillies, chaat masala powder, black salt, salt, roasted cumin powder, red chilli powder and coriander leaves. Mix well.
Grind beetroot, ginger, green chillies, coriander leaves, lemon juice, tamarind pulp, sugar, black salt, chaat masala powder, pani puri masala, and red chilli powder to a smooth paste.
Transfer the paste to a bowl. Pour water. Mix well.
Pour it into shot glasses.
Poke a hole in the puri with your thumb, and fill it with the potato mixture.
Place it over the shot glass.
Khooni pani puri is ready to serve!
