Servings: 1 jar (approx. 18-20 onions)

Prep Time: 15 minutes

Soaking Time: 24 hours

Ingredients:

1 cup water

1 tbsp salt

1-inch cinnamon stick

1 tsp black peppercorns

4-5 cloves

½ medium beetroot, sliced

18-20 small onions, peeled

1-inch ginger, julienne

3-4 green chillies, slit

1 cup vinegar

Instructions:

Step 1: Prepare the Brine

1.  Heat a saucepan over a high flame.

2.  Add water, salt, cinnamon stick, black peppercorns, cloves, and beetroot.

3.  Bring to a boil, then reduce heat and cook for 5 minutes.

4.  Allow the mixture to cool down completely.

Step 2: Prepare the Onions

1.  Take each onion and make two cuts at the bottom, creating a cross.

2.  Repeat for all onions.

Step 3: Assemble and Soak

1.  In a glass jar, create layers:

  • Onions
  • Ginger and green chillies
  • Repeat the layers

2.  Pour vinegar and the cooled beetroot water over the layers.

3.  Close the lid and shake well.

4.  Soak for 24 hours.

Step 4: Serve

Your sirke wale pyaz are now ready to serve! Enjoy!

Tips:

•  Use a clean and dry glass jar to prevent contamination.

•  Adjust the number of green chillies to suit your desired level of spiciness.

•  Store the pickled onions in the refrigerator to prolong their shelf life.
