Ingredients:
250g bhindi, cut into thin strips
2-3 tbsp besan
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp coriander powder
1 tbsp water
2 dried red chillies, broken/torn in half
1.5 tsp cumin seeds
1 tsp ajwain/carom seeds
1 tbsp garlic, chopped
2 medium-sized onions, sliced
½ tsp garam masala powder
Salt to taste
1-2 tbsp lemon juice
Oil for frying
Recipe Note:
After rinsing the bhindi, let it dry for 30 minutes.
Before slicing the bhindi into 4 parts, ensure there is no moisture.
Method:
In a bowl, add sliced bhindi, besan, red chilli powder, turmeric powder and coriander powder. Mix well.
Add a little water. Mix well. Make sure they are well coated with besan.
Heat oil in a pan over medium flame.
Add the besan-coated bhindi.
Fry for a few minutes until they are golden and crispy.
Take them out. Keep aside.
Transfer the leftover oil to a bowl.
Again heat the pan over medium flame. Add 2 tbsp oil (you can use the same oil).
Add dried red chillies, cumin and ajwain. Cook until fragrant.
Add garlic. Cook until golden and fragrant.
Add onion. Cook until the onion softens and becomes translucent.
Add garam masala powder and salt. Mix well. Cook for 1-2 minutes.
Add the fried besan bhindi. Give a good toss.
Pour lemon juice. Give a good mix.
Cook until the lemon juice is fully absorbed.
Kurkuri besan wali bhindi ki sabji is ready to serve!

Instructions

- Add a little water. Mix well. Ensure they are well coated with besan.
- Heat oil in a pan over medium flame.
- Add the besan-coated bhindi.
- Fry for a few minutes until they are golden and crispy.
- Take them out. Keep aside.
- Transfer the leftover oil to a bowl.
- Again heat the pan over medium flame. Add 2 tbsp oil (you can use the same oil).
- Add dried red chillies, cumin and ajwain. Cook until fragrant.
- Add garlic. Cook until golden and fragrant.
- Add onion. Cook until onion softens and becomes translucent.
- Add garam masala powder and salt. Mix well. Cook for 1-2 minutes.
- Add the fried besan bhindi. Give a good toss.
- Pour lemon juice. Give a good mix.
- Cook until the lemon juice is fully absorbed.
- Kurkuri besan wali bhindi ki sabji is ready to serve!
Notes
Before slicing the bhindi into 4 parts, make sure there is no moisture.
