Hariyali (Green) Veg Pulao Recipe
This hariyali or hara bhara veg pulao is a quick one-pot rice recipe which is made using raisins, lemon grass, curry leaves powder and ginger powder. This no-onion no garlic green rice is so flavourful and healthy. To make this wholesome dish you just need 30 minutes.

Ingredients:
1 cup soaked basmati rice
2 tbsp brown raisin
2 tbsp peanuts
½ tsp mustard seeds
2 dried red chilli
2 medium-sized potatoes, chopped
1 medium-sized carrot, chopped
6-8 florets of cauliflower
2 tbsp green peas
10-20 lemon grass cuts
2 tbsp curry leaves powder
½ tsp ginger powder
Salt to taste
3 tbsp ghee
2.5 cups water
Method:
Heat a pot over a medium flame. Add ghee. Allow it to melt.
Add raisins and cook for a few seconds. Take them out. Keep aside.
Add peanuts and cook for a few seconds. Take them out. Keep aside.
Add mustard seeds and red chilli. Allow them to splutter.
Add potatoes and carrots. Cook for 1-2 min. Add cauliflower and cook for 1-2 min. The veggies should become slightly golden in colour.
Add soaked rice, green peas, lemon grass, curry leaves powder, ginger powder and salt. Mix well.
Pour water and bring to a boil. Cover the pot. Lower the flame. Allow it to cook for 10-15 min or until the rice is fully cooked.
Uncover and check the rice. Cover it again and allow it to rest for 5 minutes.
Add the fried raisins and peanuts. Toss very gently.
Serve hot!
