Creamy Masala White Sauce Pasta Recipe

Type Of Pasta:
Here I have used farfalle pasta. It is also known as a bowtie or butterfly pasta. You can use any kind of pasta for this recipe like macaroni/elbow, penne, fusilli, spaghetti etc. Just don’t forget to check the package instructions, as the cooking time depends on the shape of the pasta.
About The Masala:
If you don’t want to use pav bhaji masala powder in this recipe then you can also use garam masala powder.
How To Prevent Pasta From Sticking Together?
- To prevent the pasta from sticking together after cooking, always keep the following points in mind.
- Always cook pasta in a large pot with enough water.
- Always add pasta to boiling salted water.
- And after adding the pasta, keep stirring for at least 2-3 minutes, otherwise, they might start sticking.
- If you are planning to serve pasta with a sauce, like this recipe, then you should never add oil to the boiling water. Otherwise, the sauce might not stick to the pasta later on. But if you are making a stirfry then you can add a little oil while boiling the pasta.
- After draining the pasta, wash them with cold water. This way the cooking process will stop (they won’t overcook) and they won’t stick to each other.
How To Fix A Pasta Sauce That Is Too Thick?
While cooking if the white sauce becomes too thick then you can pour more milk or pasta water (the water in which the pasta was cooked) to thin it out.

Serves: 2 people
Ingredients:
1.5 cup (200g approx.) farfalle pasta
2 tbsp butter
2 tsp garlic, minced
4 tsp all-purpose flour
1 tsp pav bhaji masala powder
1 cup milk
2 cubes or 50g of processed cheese
Salt to taste
Freshly crushed black pepper, as per taste
Method:
In a saucepan, bring water to a boil over a high flame.
After it starts boiling, add salt and pasta. Give it a mix.
Cook the pasta until al dente. It may take 8-10 minutes depending upon the pasta you are using. Some brands’ pasta may require more time than others.
So after around 6-7 minutes, take out a single piece of pasta in a bowl. Then check its doneness.
Drain the pasta and keep it aside.
Heat a non-stick pan over a medium flame. Add butter and allow it to melt.
Add minced garlic. Cook until the garlic is fragrant and make sure its colour doesn’t change.
Then add all-purpose flour. Give it a good mix. Cook until fragrant. It may take 1-2 minutes.
Add pav bhaji masala and mix well.
After that pour milk into the pan, a little at a time while mixing continuously.
Keep mixing until the sauce is thick and smooth.
Add salt and processed cheese. Mix well.
Once the cheese melts completely, bring the sauce to a simmer and cook it for a couple of minutes.
Add the cooked pasta and toss well until the pasta is coated with the sauce.
Transfer it to the serving plate. Sprinkle freshly crushed black pepper over the top. Serve hot!
