Serves: 2-3 people

Ingredients:

1 cup basmati rice, rinsed and soaked for 15-20 minutes

6 medium-sized or 1 cup chicken sausages, sliced

¾ cup onions, chopped

1 tbsp ginger-garlic paste

⅓ cup green peas

⅓ cup carrots, chopped

½ tbsp garam masala powder

½ tsp black pepper, freshly crushed

Salt to taste

2 cups water

2 tbsp ghee or clarified butter

Method:

Heat a pot over a medium flame. Add ghee and allow to heat up.

Then add the chopped onions and cook for a few minutes until it turns golden brown in colour.

Add ginger-garlic paste and cook until the raw smell goes away.

Add green peas and chopped carrots. Give them a stir. Cook for 2-3 minutes.

Then add the chopped sausages. Mix well. Cook for a couple of minutes.

Lower the flame. Add garam masala powder, crushed black pepper and salt. Give them a good mix and cook for another minute.

Add soaked rice and give a gentle stir. Cook for a minute.

Pour 2 cups of water. Give a stir and bring it to a boil over a medium-high flame.

Lower the flame and cover the pot with a lid.

Cook until the rice is fully cooked and the water has completely absorbed. It may take around 5-10 minutes depending upon the quality of the rice you are using.

Note: While the rice is cooking, check a few times whether there is enough water in the pot. If all the water has been absorbed and the rice is still uncooked. Then pour more water. And continue cooking till the rice is cooked.

Uncover the pot and fluff the rice with the help of a fork.

Check if the rice has cooked completely.

Make sure all the water has been absorbed. Then turn the flame off.

The rice might look a little moist but don’t worry, just cover it again with a lid. Let it rest for 10-15 minutes. Rice will absorb all the moisture.
