Egg Salad Sandwich
Rich and creamy egg salad sandwich is perfect for your Sunday breakfast! Boiled eggs, ricotta cheese and a few spices. It’s delicious, yet very simple to make.
This sandwich is loaded with ricotta cheese, eggs and flavoured with parsley. It’s a flavourful, filling and wholesome meal. You can even make the egg salad ahead of time and store it in the refrigerator. Assemble the sandwich whenever you want. Servings: 2 sandwiches
Ingredients:
- 2 eggs, hard-boiled
- 4 bread slices
- 1 cup ricotta cheese (learn how to make ricotta cheese at home)
- 1 tbsp milk
- 1 tsp dried parsley
- 1 tsp black pepper powder
- ½ tsp salt
Cooking Directions:
Trim the edges off the bread slices. Cut the eggs in half and remove the yolks. Coarsely chop the egg whites.
In a blender, add ricotta cheese, milk, egg yolks, parsley, black pepper and salt. Process until smooth and creamy.
Pour this mixture into a bowl and add the chopped egg whites. Give it a quick mix.
Spread egg salad filling evenly on two slices of bread and place remaining slices over the filling. Cut each egg salad sandwich in half and serve them with a glass of milk.
