Easy One-Pot Chicken and Rice | Pressure Cooker Meal
One-pot chicken and rice is a delicious midweek dinner recipe that you can prepare in a pressure cooker.
This one-pot meal is super easy to make but extremely flavourful and aromatic. To make this dish, you’ll require chicken, basmati rice, carrots, green beans, onions and a blend of spices. It is a healthy and comforting meal that can be prepared in less than 40 minutes.
Prep Time: 20 minutes | Cook Time: 15 minutes | Total Time: 35 minutes
Serves: 4 people
Ingredients:
- 1.5 cup basmati rice, washed and soaked for 20 minutes
- 400g chicken (approximately 6-7 pieces)
- 1-2 cinnamon sticks
- 1 black cardamom
- 4-5 cloves
- 3 medium-sized onions, finely chopped
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- ½ tsp turmeric powder
- 1.5 tsp coriander powder
- 2 tsp garam masala
- 1 cup or 200g tomato puree
- 2 tsp sugar
- 1 tsp red chilli powder
- ⅔ cup carrot, finely chopped
- ⅔ cup green beans, finely chopped
- 3.5 cups water
- Salt to taste
- 3-4 tbsp oil
Cooking Directions:
Heat oil in a pressure cooker over medium-high heat. Add cinnamon sticks, black cardamom and cloves. Saute for 10-15 seconds or until fragrant.
Add the onions and cook till it turns lightly golden in colour.
Add ginger and garlic paste. Cook until the raw smell goes away.
Add the chicken pieces. Cook for 2-3 minutes.
Add turmeric powder, coriander powder, garam masala and salt.
Give it a good mix and cook for a couple of minutes.
Pour tomato puree, chilli powder and sugar.
Cook till oil separates from the curry.
Add the drained rice and mix well.
Pour the chopped carrots and green beans.
Pour water and combine everything together.
Secure the lid and cook over high heat until the cooker releases pressure twice i.e. 2 whistles. Then turn the heat off and release the pressure after 2-3 minutes. Open the pressure cooker and fluff rice with a fork.
Serve one-pot chicken and rice with veggie raita.
