Easy Blueberry Muffins
Quick and easy blueberry muffins recipe with step-by-step pictures. These light and fluffy muffins are made with dried blueberries in an OTG under 40 minutes.
These muffins are really tender and are studded with sweet berries. Here I have used dried blueberries but if you can get the fresh ones then go for it. It’s a super simple recipe, just add all the dry ingredients in a bowl. Mix well. Then in another bowl, beat the butter and sugar together. Add the eggs, milk and flour mixture. Combine everything together and pour the batter into the mould. Then bake!! Sprinkle powdered sugar over the top and serve warm.
Prep Time: 10 min | Bake Time: 30 min | Total Time: 40 min (for one batch)
Yield: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 eggs
- 1 tsp vanilla essence
- 1/2 cup milk
- 1/2 cup dried blueberries
Baking Directions:
Preheat the oven to 180 degree Celsius. Line a muffin tin with paper liners.
In a mixing bowl, sift together flour, baking powder and salt.
In another bowl, add softened butter and using an electric hand mixer beat it for a minute.
Then add sugar and beat for about 2 to 3 minutes.
Scrape down the sides of the bowl and add in the eggs, one at a time.
Beat well after each addition. Add the vanilla essence and gently fold with a spatula.
Add a little flour mixture and fold it in.
Then add a little milk and fold again. Keep on adding flour mixture alternating with the milk.
Add the dried blueberries and gently fold it in. But do not overmix.
Pour the batter into the lined muffin tin and bake for about 30 minutes until its lightly golden. Using a toothpick pierce the centre of the muffins and if it comes out clean then it is done.
Take it out of the oven and keep it on a wire rack to cool down.
Sprinkle powdered sugar on top of the blueberry muffins. Bake the second batch in the same manner.
