Parmesan Roasted Baby Potatoes – With Garlic and Onion
These parmesan roasted baby potatoes are so crispy and tasty! Just toss the potatoes with some seasoning and roast in the oven until golden brown. As simple as that! You can serve them as an appetizer in a party or as an evening snack with a cup of tea/coffee.
I can assure you this is the easiest snack recipe ever! It is full of flavours and yet extremely simple to make. These potatoes are crisp on the outside and soft on the inside. The parmesan crust along with the other herb and spices makes this dish incredible.
For this recipe, I have used these tiny potatoes and they look so adorable. They actually remind me of those store-bought frozen potato bites. Don’t you think they look similar? But if you can’t find these tiny ones then you can definitely use normal-sized baby potatoes. In that case, I will suggest you cut them in half and then toss them with the seasoning. That way when you’ll bake the potatoes, the core will get cooked evenly.
Making this dish was so easy and hassle-free. But peeling these tiny potatoes was the only part that took more time and effort than I anticipated. Other than that, this recipe is amazing. The finished product was so delicious that I don’t mind peeling another batch of these potatoes.
Now coming to the flavouring, these potatoes are coated with a mixture of parmesan cheese, garlic powder, onion powder, red chilli flakes and dried basil. I have used dried herb in this recipe but if you can get the fresh herb, then use that. Then pour a few spoons of butter and oil over them, season with salt and bake them in a preheated oven until they become crisp.

Ingredients:
- 500g baby potatoes
- 1/2 cup parmesan cheese, grated
- 1 tsp garlic powder
- 1.5 tsp onion powder
- 1 tsp red chilli flakes
- 1/2 tsp dried basil
- Salt to taste
- 2 tbsp butter, melted
- 1 tbsp oil
Cooking Direction:
To parboil the potatoes:
Rinse the baby potatoes. Keep it aside.
Heat water in a pot over a high flame. After it comes to a boil, add all the baby potatoes into the water. Parboil the potatoes for 5-6 minutes. The potatoes should become soft but not cooked through. That means that the centre should be a little firm.
Then drain the boiling water and quickly rinse them with cold water to stop the cooking process. Keep them aside to cool down. After that peel those potatoes.
To roast the potatoes:
Preheat the oven to 200-degree Celsius. Line a baking tray with parchment or baking paper.
In a large-sized bowl, add parmesan cheese, garlic powder, onion powder, red chilli flakes, basil and salt. Give it a quick mix.
Then add the parboiled and peeled potatoes into the bowl. Drizzle melted butter and oil over them. Toss everything to combine.
Transfer them to the baking tray and bake for 30 minutes or until they become golden brown and crispy. As every oven is different, so keep an eye over them.
Take them out of the oven and place them on the serving plate. Sprinkle fresh coriander leaves and serve with any sauce or dip.
